Tacos with Black Rice Burger & Zesty Slaw
1 package Hilary’s Eat Well Black Rice Burgers
1 Tbs chili powder
1 tsp cumin, ground
3 Tbs water
4 taco shells
½ cabbage (shredded)
4 Tbs lime juice
2 tsp jalapeno (fresh, minced)
1/3 c Hilary’s Eat Well Ranch Chia Dressing
For the slaw, toss shredded cabbage with lime juice. Add jalapeno and Ranch Chia dressing. Stir well. Refrigerate 30 minutes before serving. For the filling, place the Black Rice Burgers in a medium skillet. Heat to medium. As the burgers thaw, break them apart into large crumbles. Add the chili powder, cumin and water. Stir and heat for 10 minutes. Serve in taco shells topped with the slaw.
*Optional Additions: sliced avocado, chopped tomatoes, grated cheese, chopped onion.
